Blueberry Apricot Muffins

Ingredients:

  • 1/2 cup butter
  • 1/2 cup brown sugar , packed
  • 1 (10 oz) jar apricot preserves
  • 1/2 cup milk
  • 2 eggs
  • 2 2/3 cups flour
  • 1 tsp salt
  • 1/2 tsp baking soda

Directions:

  1. Preheat oven to 350F.
  2. Grease and flour tins.
  3. Cream butter, eggs and sugar.
  4. Blend in preserves and milk.
  5. Add combined dry ingredients, mixing just until moistened.
  6. Fold in blueberries.
  7. Spoon into greased and floured muffin tins, filling each cup 2/3 full.
  8. Bake for 25 minutes or until lightly browned.
