This recipe is the signature drink of The Blue Ginger restaurant in Wellesley, Mass. which is owned by Ming Tsai.
Ingredients:
3 ounces vodka, well chilled
2 ounces fresh lime juice
2 ounces ginger syrup
lime wedge, for garnish
4 cups sugar
2 cups fresh ginger, cut into 1/8-inch slices
2 cups water
Directions:
1. In a cocktail shaker, combine all ingredients with ice. Shake well and strain into a martini glass. Garnish with lime wedge.
2. For the ginger syrup:.
3. In a medium saucepan over high heat, combine sugar, ginger and water and bring to a boil. Reduce heat and simmer until syrupy and reduced by half, about 40 to 45 minutes. Strain ginger pieces out and reserve syrup.
4. (Trick: toss dried ginger in sugar, bake at 200 degrees until dried thru, about 4 hours and voila-ginger candy).
