Blue Cheese Waldorf Salad

Another comfortable stand by from the 1930’s is the Waldorf Salad. Great for a lunch, a light supper, or dessert.
Ingredients:
1/2 cup pecans, halved
1 apple, chopped (red delicious or granny smith)
2 -4 celery ribs, chopped
1 tablespoon lemon juice
1/2 cup blue cheese
Directions:
1. Toss the pecan halves, apple, and celery in the lemon juice, and crumble in loads of Blue cheese. That’s all the dressing you need. Serves 1—easily doubled, tripled, etc.
