Blue Cheese Stuffed Cherry Tomatoes

With fresh produce becoming available around our parts soon, I have fresh fruits and veggies on my mind, thinking ahead to summer bbqs. When sweet, juicy, plump cherry tomatoes are ready, this is a great combination of flavors, and can be made up to a day ahead - just keep well-chilled.
Ingredients:
36 cherry tomatoes
4 ounces cream cheese
1/4 cup sour cream
heaping 1/2 cup crumbled blue cheese
1 tablespoon fresh chopped chives
1/4 teaspoon garlic salt
additional fresh chopped chives for topping, if desired
Directions:
1. Cut a thin slice from the top of each tomato.
2. With a small melon baller, scoop out the tomato pulp and discard.
3. Sprinkle inner tomato shells with a little salt and pepper, then invert them on a rack or paper towelling and allow them to drain for 15 minutes.
4. While tomatoes are draining, prepare the filling:
5. Cream together cream cheese and sour cream.
6. Stir in blue cheese, chives and garlic salt.
7. Stuff drained tomatoes with filling and sprinke with a little additional chopped chives, if desired.
8. Cover and chill for several hours or overnight before serving.
