Blue Cheese Soup With Potatoes And Walnuts

This is an incredible recipe. I love blue cheese and am always looking for great ways to eat it. I got the recipe off and have made it 4 or 5 times and love it. Can't get enough of it. Enjoy
Ingredients:
2 tablespoons butter
1 white onion
2 stalks celery
2 garlic cloves
1 medium potato
3 cups chicken stock
1 cup milk
2 ounces blue cheese
1/4 cup walnut pieces
1/2 cup plain yogurt
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Finely dice onion and potato then thinly slice celery and mince the garlic.
2. Over medium heat melt butter in a saucepan.
3. Without browning cook onion, garlic, celery and potato until onion is soft about minutes.
4. Stir in broth and milk then add crumbled blue cheese reserving 1 tablespoon for garnish.
5. Simmer until all vegetables are tender about 10 minutes then stir in yogurt and cook 3 minutes.
6. Do not allow to boil then sprinkle on reserved cheese and serve hot.
