Blue Cheese Balls (Juustotahna)

Another recipe from the good people at Moosewood Restaurant. Chill time is cooking time.
Ingredients:
1 1/2 cups crumbled blue cheese (roquefort, gorgonzola, or danish blue)
3/4 cup butter, room temperature
1/4 teaspoon tabasco sauce or 1/4 teaspoon hot sauce
1 tablespoon minced onion
1 cup finely chopped toasted almond
Directions:
1. Combine cheese, butter, Tabasco and onion in food processor. Process until smooth.
2. Form into walnut size balls. Roll in almonds.
3. Chill, covered in refrigerator.
4. Serve on a cheese board with crackers and rye bread triangles with sliced cherry tomatoes or radishes.
