I make this dip everytime the ladies and I go to our annual state bowling trip. They always remind me to bring this dip along after a long night of bowling and beers, this just hits the spot.
Ingredients:
1 lb bacon
1 cup sour cream
1 cup mayo
1/2 head lettuce (or store bought shredded lettuce in a bag)
2 medium tomatoes
1/2 medium onion or 1 bunch green onions
salt & pepper to taste
Directions:
1. fry bacon until crisp and drain on a paper towel
2. chop head of lettuce into fine chop
3. seed tomatoes and chop into fine pieces....sometimes I blanch them for 1 or 2 minutes in boiling water to remove the skins easily, but the skin is fine on the tomato as well, your preference.
4. chop onion finely or grate onion with a cheese grater
5. stir together sour cream and mayo
6. crumble cooled bacon and add
7. add tomatoes and onions
8. salt & pepper as needed, you may omit salt as bacon is already salty enough
9. right before serving add lettuce...or it becomes to wilted and soft
10. serve with crackers, melba toasts, garlice bread, pretzles, etc.
11. this recipe is easily doubled as needed for a crowd
