During my spell in university doing my psychology degree i worked ina popular chain of cocktail bars in the uk called revolution. i kept all my training materials, and myu little laminated ingredient lists that i used to keep in my apron. i thought it was about time i updated them onto recipezaar. There are some revolution classics in this and also some that they dont do anymore at rev. I may be a bit vague on the floating parts of cocktails, i havent made them in a while. This may be a good excuse to! the reason why i specify usinga glass tumbler to mix the drink in is purely for logistics- cretaing one drinks worth at a time by measuring it out in the serving glass and serving it in the same glass. its how we used to do it a rev, if your prefer to do it in a cocktail shaker thats fine just beware not to out too much ice in.
Ingredients:
3 ounces vodka (2 shots, absolut pepper or chilli inferno vodka)
2 lemon slices
1 dash worcestershire sauce (optional)
1 dash tabasco sauce (optional)
300 ml tomato juice
salt and pepper
25 ml sherry wine
1 stalk celery
1 lime wedge
Directions:
1. In a clean 14oz glass tumbler half fill with ice our over vodka salt pepper lemon slice and tomato juice,.
2. if using tumbler put the larger half of the cocktail shaker on the top of the glass tumblerhold tight and shake until their is condenstaion on outside of the cocktail shaker.
3. tap cocktail shaker and glass GENTLY againt work surface thus releasing glass and shaker.
4. tip contents into back into tumbler. float 1/2 shot of sherry top of drink by aiming for a floating ice cube and slowly pouring onto it.
5. garnish with celery stick and lime wedge sat in the glass.
