(Block) Velveeta Cheeseburger Mac

Always enjoyed making Cheeseburger Mac with the Velveeta from a box - figured out how to make it (slightly) healthier using a block of velveeta instead of the pre-packed shells and cheese.
Ingredients:
1 lb ground turkey
1 1/2 cups whole wheat rotini
8 ounces velveeta reduced fat cheese product (cubed)
2 3/4 cups skim milk
1/4 cup ketchup
1 tablespoon yellow mustard
1/4-1/2 cup onion (diced)
1/4 cup nonfat sour cream
1 large tomato (diced)
Directions:
1. Brown ground turkey in a large skillet. Drain and return to the skillet.
2. Add Milk, Ketchup, and Mustard; bring to a boil over medium-high heat.
3. Add Rotini, and continue to boil, covered, for about 7 minutes. Stir occasionally.
4. Add Tomato and Onion, continue to boil, covered, for another 5 minutes. Stir occasionally.
5. Reduce heat to medium-low, add cubed velveeta and sour cream. Heat uncovered and stir until velveeta is melted and sauce is smooth.
6. Let stand to allow sauce to thicken for a few minutes before serving.
