Down along the bayou country is a great casserole!!
Ingredients:
8 oz. cream cheese
1 stick butter
1 lb. peeled shrimp
1 large onion, chopped
2 ribs celery, chopped
2 tbsp. butter
1 can cream of mushroom soup
1 can mushrooms, drained
1/2 red bell pepper
1 tsp. garlic salt
1 tsp. tabasco
1/2 tsp. red pepper
1 pt. crabmeat (one can)
1 1/2 cup cooked rice
cheddar cheese, shredded
cracker crumbs
2 tablespoon cajun seasoning
Directions:
1. Melt cream cheese and butter using double boiler. Saute shrimp, onion, bell pepper, celery in 2 tablespoons butter. Add to the first mixture. Add soup, mushrooms, seasonings, crabmeat, and rice. Mix well, place in 2 quart casserole and top with cheese and crackers. Bake at 350 degrees for 30 minutes until bubbly.
