Yum yum! Because these have pumpkin in them, they have a touch of sweetness very reminiscent of old school dinner rolls. Modified from full calorie recipes to have reduced calories and less cholesterol. Passes for a full calorie roll, great for Thanksgiving.
Ingredients:
3/4 cup light soy milk
1 tablespoon turbinado sugar
1 package fast rising dry active yeast
1/8 cup egg beaters
3/8 cup pumpkin, unsweetened and pureed
2 1/2 tablespoons canola oil
2 1/2 cups flour
2 teaspoons poppy seeds
1 cooking spray (butter flavored is best)
Directions:
1. Combine soy milk and turbinado sugar in a large saucepan. Warm soy milk to recommended temperature (indicated on package of yeast).
2. Add yeast to soy milk/turbinado and let sit for 5 minutes.
3. Add egg beaters to mixture and beat well to combine.
4. Add pumpkin and oil.
5. Add flour and mix well.
6. Transfer to a lightly floured surface, and knead for two minutes.
7. Put dough into large mixing bowl sprayed with cooking spray. Cover with a towel and let rise in a warm place until doubled.
8. Punch dough down; turn out onto a lightly floured surface, and knead until dough is smooth and supple (7 minutes or so).
9. Cut dough into 2 balls; cut each ball into 6 pieces.
10. Roll each piece into a round and arrange on baking sheet that has been sprayed with the cooking spray. Arrange them so that they just barely touch one another.
11. Sprinkle with poppy seeds.
12. Cover with towel, place in warm place, and let rise until doubled in size.
13. Preheat oven to 375F.
14. Bake until golden-brown (15-25 minutes).
15. Let cool a bit, then serve.
