BLACKBERRY SCONES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stolley Estate in Wills Point, Texas in 1982.
Ingredients:
3 cups all purpose flour
2 tablespoons baking powder
1/2 teaspoon baking soda
1-1/2 tablespoons granulated sugar
2 sticks ice cold butter cut into small chunks
2 cups buttermilk
1 cup fresh blackberries sweetened
Directions:
1. Preheat oven to 400.
2. Combine flour, baking powder, baking soda and sugar and mix thoroughly.
3. Cut butter into dry mixture with a pastry blender until mixture resembles meal.
4. Chill 10 minutes then add blackberries and mix well until blackberries are coated well with flour.
5. Add buttermilk a little at a time mixing until all ingredients are moistened and forms dough.
6. Gather into a ball and knead 15 times on a flour covered board or table.
7. Roll out dough to 1” thickness then cut out scones with a floured heart shaped biscuit cutter.
8. Place on an ungreased baking sheet close together but not touching.
9. Brush tops with buttermilk and sprinkle with sugar then bake 20 minutes or until golden brown.
10. Serve hot with blackberry jam.
