Delicious, low-fat blackberry muffins- frozen berries or fresh!
Ingredients:
2 c. whole wheat flour
1 tbsp. baking powder
3 tbsp. sugar
1 egg
1 c. skim milk
1 c. blackberries
Directions:
1. Combine the egg, milk and 1 tbps blackberries in a small bowl and mix well. Set aside.
2. Mix the dry ingredients in a large bowl. Stir in the firm blackberries, coating them with the dry mixture.
3. Combine the web and dry ingredients in the large bowl and mix only until barely combined. Do not overmix- there should still be dry flour visibe in clumps.
4. Cook at 400 for 20min in paper cups
