I don't remember where I found this particular recipe,but it is similiar to what a dear old friend used to make for me. Melt in your mouth delicius!
Ingredients:
4 -5 cups blackberries (fresh or frozen)
1 cup sugar
3/4 teaspoon salt, divided
1/2 teaspoon lemon extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
2/3 cup milk
whipped cream (optional)
Directions:
1. Preheat oven to 400 degrees. In a Dutch oven, combine the blackberries, 1 cup sugar, 1/4 tsp salt and lemon extract. Bring to a boil.
2. Reduce heat and simmer for 5 minutes.
3. In a mixing bowl, combine the flour, baking powder, nutmeg, 1 tablespoons sugar, and remaining salt. Add the milk. Stir just until mixed. Dough will be very thick.
4. Drop by tablespoonfuls into six mounds onto the hot blackberry mixture. Bake at 400 degrees for 40 minutes. Serves 6.
5. Top with whipped cream if desired.
