This tasty treat is healthy and low calorie. You can use other fruits,such as peaches or other berries.
Ingredients:
1/2 c sugar
4-1/2 tsps. quick cooking tapioca
1/4 tsp ground allspice
5 c fresh or frozen blackberries,thawed
2 tbs orange juice
dough
1 c flour
1/3 c plus 1 tbs sugar divided
1/4 tsp baking soad
1/4 tsp salt
1/3 c reduced-fat vanilla yogurt
1/3 c fat-free milk
3 tbs butter,melted
Directions:
1. In a large bowl,combine the sugar,tapioca and allspice. Add blackberries and orange juice;toss to coat. Let stand for 15 mins. Spoon into a 2 qt. baking dish coated with cooking spray. In a large mixing bowl,combine the flour,1/3 c sugar,baking soda and salt. Combine the yogurt,milk and butter;stir into dry ingredients until smooth. Spread over berry mixture.
2. Bake at 350 degrees for 20 mins. Sprinkle with remaining sugar. Bake 25-30 mins longer or till golden brown. Serve warm.
