I was trying to create a dip with a Mediterranean flavor to go with toasted pita chips, and this is what I came up with. I hope you like it.
Ingredients:
1 (16 ounce) can black olives
1/4 cup minced garlic
1/4 cup parmesan cheese
1 teaspoon anchovy paste
olive oil
juice of one lemons or lime
black pepper
Directions:
1. Combine all ingrediants in a food processor, blending in just enough olive oil to make smooth.
2. Serve with toasted pita chips.
