Mexican dish collected while living in Albuquerque New Mexico
Ingredients:
2 (4 ounce) cans chopped green chilies
2 (4 1/2 ounce) cans chopped black olives
2 medium tomatoes, finely chopped
6 green onions, finely chopped
2 tablespoons salad oil
2 tablespoons red wine vinegar
salt and pepper
Directions:
1. mix ingredients and allow to chill several hours.
2. Serve with corn or tortilla chips.
3. Vary by adding a 1 lb bag of rotini noodles and serving as a salad.
4. I make large batches and keep in the refrigerator.
5. Will keep several days in sealed containers.
