we always had blackeyed peas and cornbread for new years day when i was growing up...this is a great soup made with the blackeyed peas so i hope you will enjoy this......... serve with corn bread, honey butter. Ingredients:
1 - pound ground beef
1 pound polish sausage, cut into bite-sized pieces( browning the sausage before adding it to the pot adds more flavor)
1- cup finely chopped onions
two- 15 ounce cans blackeyed peas with jalapenos
1-14 ounce can beef broth
1- 14 ounce can diced tomatoes or (fresh)
1- 10 ounce can mild diced tomatoes with green chiles ( like rotel)
1- 10 ounce can chopped green chiles
2-medium jalapenos chiles seeded and chopped
1/8 - teaspoon salt
black pepper to taste
Directions:
1. place a dutch oven or heavy pot over medium - high heat .
2. add the ground beef and onions and cook until beefe is browned.stirring frequently........
3. add the sausage, black-eyed peas, broth, diced tomatoes, and tomoatoes with chiles, green chiles, jalapenos and salt........ mix well
4. bring the mixture to a boil, reduce the heat, cover tightly
5. simmer for 45 minutes............
6. serves 8....................
7. note......... can make ahead and refrigerate over night to allow the flavors to blend .........then reheat
