Black Eyed Pea Cocktail Balls

Ingredients:
1 (15 ounce) can black-eyed peas
2 tablespoons grated onions
1 beaten egg
1 tablespoon salad oil
5 tablespoons flour
red pepper
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon sage
cooking oil
Directions:
1. Drain and mash black eyed peas.
2. Combine all ingredients, except cooking oil, the 1 tablespoon salad oil is combined with all ingredients.
3. MIx well.
4. Drop by rounded teaspoons into hot cooking oil; cook until browned.
5. Drain on absorbent towels.
6. This may be made into patties and fried, it has a sausage taste.
