An old English recipe
Ingredients:
4 ounces currants
5 tablespoons golden syrup
1/2 lemon, juice and grated rind
2 eggs
4 ounces soft butter
4 ounces self raising flour
4 ounces sugar
Directions:
1. Heat oven to 375 F.
2. Grease and line 7 x 7 inch tin.
3. Sprinkle currants over base.
4. Mix syrup and lemon juice together.
5. Pour over currants.
6. Quickly beat together all remaining ingredients until light and fluffy.
7. Spread batter over currants.
8. Bake for 25 - 30 minutes or till firm and springy to touch.
9. Cut into 12 pieces while still hot.
10. Cool in tin.
