Black beans and salsa! A two-ingredient wonder that is perfect as a side dish or a salsa dish on its own. This is the simplest recipe in the world and a very healthy, fiber-enriched dish that's perfect for any meal. Read more . Eat this alone as a great side dish or with chips. You can even use it as a great filling for an omelet. Its a great recipe for frugal times and something that would be great for those times when company comes over and you're unprepared to serve anything other than chips and dip.
Ingredients:
1, 29 ounce can of black beans, drained and rinsed
1, 16 ounce jar of salsa (the thicker, the better!) (i use pace picante salsa (medium).

Directions:
1. In a medium-sized pot, combine the two ingredients.
2. Heat over a medium flame, stirring well until heated.
3. Serve!

5. 6 chicken breasts, sauteed in a frying pan with 2 TB olive oil. Cook until tender.
6. Place the breasts in a pan and add 1/4-1/3 cup of Black Beans And Salsa over each breast.
7. Using sliced Monterey Jack cheese, add one or two slices on top of the chicken.
8. Bake at 350 degrees for 20 minutes or until cheese has melted completely.
9. Serve each breast with a sprinkling of chopped scallions, a serving of freshly steamed corn and a small green salad. Magnifico! And tasty, too!
