I like to make homemade black beans and eat them with Black Bean and Corn Quesadillas, but it's also nice to freeze the remainder so you don't have to buy canned beans for your next recipe. Cook time excludes soaking time.
Ingredients:
1 lb black beans
4 ounces olive oil
1 large yellow onion, diced
1 teaspoon minced garlic
1 large green bell pepper, diced
1 tablespoon tomato paste
1 teaspoon ground cumin
1 tablespoon sugar
1 teaspoon salt
1 teaspoon white vinegar
1 ounce diced pimento
Directions:
1. Pick through beans and wash thoroughly.
2. Soak beans in cold water for 1 to 2 hours.
3. Drain and place in a pot and cover with fresh water.
4. Cook covered on medium heat until beans are tender.
5. Drain any remaining liquid and add remaining ingredients.
6. Cook for 15 minutes or until onions are just tender.
