High fiber, low fat & cal soup! Sodium is a lot less with no sodium soup base!
Ingredients:
3 c black beans, puree 3/4 in blender
2 t lime juice
5 baby carrots, chopped
1/2 c onion, chopped
2 tsp garlic, minced
1/4 c roasted red pepper, chopped
2 beef bouillon cubes
7 c water
1 c frozen corn
1/2 c refried beans
Directions:
1. I used no sodium beef flavored soup base but analyzer didnt recognize so substituted the cubes.
2. Refried beans used as thickener, could add 2T flour to veggies in the beginning and maybe eliminate some carbs and calories?1?
