Ingredients:

Directions:

  1. Black Bean Soup:
  2. Simmer beans and broth in a large pot over medium heat for 20-30 minutes. Remove bay leaf and half of the bean-broth mixture.
  3. Puree the remaining bean mixture in the pot with a hand-held stick blender or in a food processor until smooth. Return reserved beans to the pot; keep warm over low heat.
  4. Saute onion, garlic and seasonings in oil in a non-stick skillet until soft, about 5 minutes.
  5. Deglaze pan with vinegar, then add tomatoes and their juice. Simmer to reduce slightly, then mash tomatoes lightly. Add to soup and cook another 5 minutes.
  6. Serve with Pico de Gallo
  7. Pico de Gallo:
  8. Toss all ingredients together in a bowl; chill until ready to serve. (Keeps 1-2 days chilled.)
  9. Spiced Pork Kebabs:
  10. Preheat a grill or a grill pan on the stove to medium-high.
  11. Combine sugar and spices in a small bowl.
  12. Thread 2 chunks of pork and 1 piece kielbasa on each of 8 skewers. Sprinkle with the spices and grill until pork is cooked through, 6-8 minutes per side. Serve with the Soup.
