Spicy soup. Can be vegetarian if replacing chix broth with veg broth. Will definately warm you up.
Ingredients:
1 medium onion, chopped
3 carrots, sliced
2 stalks celery, chopped
4 cloves garlic
1/2 teaspoon cumin
1 1/2 tablespoons dried basil
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon tabasco sauce
32 ounces black beans
1 (14 1/2 ounce) can crushed tomatoes
2 (14 1/2 ounce) cans chicken broth
1 1/2 cups cooked rice
Directions:
1. Combine all ingredients (except rice) in crock pot.
2. cook 1 hour.
3. Add rice before serving.
