Makes a huge batch, can easily be cut in half.
Ingredients:
2 (16 ounce) cans black beans, rinsed and drained
2 (16 ounce) cans white shoepeg corn, drained
2 (8 ounce) cans rotel tomatoes & chilies
1/2 red onion, chopped
6 tablespoons lime juice
1/2 bunch fresh cilantro
3 tablespoons oil
1/2 teaspoon cumin
Directions:
1. Mix together.
2. Best if left overnight.
