To allow all the flavors of the Black Bean Salad to develop, make it ahead of time.
Ingredients:
1 (15-ounce) can black beans, rinsed and drained
1 1/2 cups chopped seeded tomato (about
2 large)
1/4 cup fresh lime juice
2 tablespoons olive oil
1/3 cup chopped fresh cilantro
2 tablespoons minced shallot
1 teaspoon minced garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon crushed red pepper
Directions:
1. Combine all ingredients, stirring well. Cover and let stand 1 hour.
