Black Bean Quesadillas

Ingredients:
14 ounces black beans, drained
1 tomato, chopped
1 bunch cilantro, chopped
1 (4 ounce) can olives, chopped
8 tortillas
2 cups shredded cheese
1 bunch spinach leaves
8 ounces salsa
8 ounces sour cream
Directions:
1. Mash beans, add tomato, cilantro, & olives.
2. Spread over tortilla, cover with cheese, spinach, and salsa, and top with second tortilla.
3. Bake at 350 F for 12 minutes until cheese is melted.
4. Top with salsa and sour cream.
