Black Bean Patties

Patties for burgers, or eating alone with a side of salsa
Ingredients:
15 oz black beans, drained and rinsed
1 small potato, boiled and diced
1/4 cup grated onion
1/4 cup carrot
1 tablespoons cilantro, chopped
1/4 cup bread crumbs
1 tsp olive oil
Directions:
1. Put beans, potato, onion, carrots, parsley, salt and pepper in a food processor and pulse until well blended
2. Divide the mixture into 4 portions and shape into 4 patties. Coat each patty evenly with breadcrumbs and set on a baking sheet. Refrigerate for at least 30 minutes.
3. Heat the olive oil over medium heat in a large skillet. Cook patties until golden brown, about 5 minutes on each side. Serve with salsa on the side, if desired.
