Can be used as a salad, or side dish Ingredients:
1 (15 ounce) can black beans |
1 cup frozen corn |
1 green pepper, diced |
1 sweet red pepper, diced |
1 cup diced red onion |
2 stalks celery, chopped |
3/4 cup monterey jack cheese, cubes chopped |
3 tablespoons lemon juice |
3 tablespoons red wine vinegar |
2 tablespoons olive oil |
2 tablespoons minced garlic |
1 tablespoon italian spices |
1 teaspoon pepper |
1/2 teaspoon cumin |
Directions:
1. Drain and rinse the black beans. Mix the salad ingredients together. 2. Mix the dressing ingredients together and pour over sald. Toss. Chill atleast 2 hours. |
