Black Bean Dip

Great way to spice up your party.
Ingredients:
2 (16 ounce) cans black beans
2 cups salsa
1 teaspoon butter
1 medium onion, chopped
1 red bell pepper, chopped
2 garlic cloves
1 tablespoon dried parsley or 1 tablespoon cilantro
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup shredded cheese
1 medium tomato, chopped
Directions:
1. Blend 1 can of beans, and 1/2 cup of salsa in a food processor until smooth. I use the Wonderful Salsa off this site.
2. Saute the onion, pepper, and garlic in the butter until tender.
3. Add all the rest of the ingredients to the pan, (except the cheese,and tomatoe) and simmer for 5 to 10 min., stirring often.
4. Pour into serving dish and garnish the top with the cheese and tomatoe.
5. Serve immediately with chips, and veggie sticks.
