Black Bean Croquettes

These are very tasty and again you can adjust the seasonings to suit yourself. Black bean ones are the round ones the others are the potato croquettes.
Ingredients:
2 (15 ounce) cans of black beans , rinsed
1 teaspoon ground cumin
1 cuo corn kernals
1/4 cup plus 1/3 cup bread crumbs
2 cups finely chopped tomatoes
2 scallions sliced
1/4 cup chopped fresh cilantro
1 teaspoon chili powder
Directions:
1. 1. Preheat oven to 425 degrees F and coat a baking sheet with cooking spray.
2. 2. Mash the black beans and cumin with a fork in a large bowl until no whole beans remain. Stir in the corn and 1/4 cup of the bread crumbs.
3. 3. Combine the tomatoes , scallions, cilantro 1/2 teaspoon chili powder in a bowl and add this to the black bean mixture.
4. 4. Then shape into rounds and press into the bread crumbs and coat and then place on the baking sheet and bake for about 20 minutes or until golden brown and heated through.
