Black Bean & Couscous Salad

Really great! Easy to make! Pretty looking and healthy
Ingredients:
1 cup uncooked couscous
1 1/4 cups chicken broth
3 tablespoons virgin olive oil
2 tablespoons lime juice
1 teaspoon red wine vinegar
1/2 teaspoon ground cumin
8 greens onions chopped
1/2 red bell pepper seeded and chopped
1/4 cup cilantro
1 cup frozen corn kernels thawed
1 (15 ounce) can black beans drained and washed
salt and pepper to taste
1 teaspoon dill
1 teaspoon parsley
Directions:
1. 1. Place the couscous in a bowl and heat the chicken broth in the microwave and then pour on the couscous and cover and let stand for 5 minutes.
2. 2. In another bowl whisk together the olive oil, lime juice, vinegar and cumin, dill, parsley, then add the green onions, red pepper, cilantro, corn and beans toss to coat.
3. 3. Fluff the couscous and add the other ingredients and mix well, season with the salt and pepper to taste then cover and let chill.
