Black Bean Corn Salad

Great summer salad.
Ingredients:
3 tbsp olive oil
2 limes (juiced)
1/2 tsp cumin
2 cloves garlic
1/4 tsp ancho chile powder
4 ears of corn (grilled or boiled)
1/2 can black beans (drained)
1 red pepper
1 lrg tomato
1 cup fresh cilantro
1/2 lrg red onion
Directions:
1. Whisk first 5 ingredients in a small bowl.
2. Remove corn from cobs.
3. Dice/chop Pepper, Tomato, Onion & Cilantro.
4. In large bowl combine Beans and all vegetables.
5. Pour dressing over all and toss.
6. Salt & Pepper as needed.
7. Refrigerate for at least 1 hour.
