Black Bean Chipotle Chili Soup

Serve with yogurt, avocado and slice of lime.
Ingredients:
1 t olive oil
1 onion, chopped
4 cloves garlic minced
1 cup diced carrots
4 teaspoons cumin
1 cup chopped celery
1 red pepper, chopped
1 t wine
30 oz beans
1 t diced pepper (chipotle)
14 ounce tomatoes, undrained
1/2 c orange juice
6 cups water
2 vegetable bouillon cubes
1 salt and pepper to taste
2 t lime juice
Directions:
1. Saute veggies. Add everything else. Simmer until carrots are tender. Best to let sit overnight before serving.
