Zippy Black Bean Salsa with a chili tang for dipping, nachos, or even enjoying plain as vegan chili!
Ingredients:
1 3/4 cup bush's black beans
1 3/4 cup canned tomatoes
1/2 onion
2 cloves garlic
1 tablespoon chili powder
1 pinch sea salt
Directions:
1. Use non-stick pan. Spray lightly with olive oil cooking spray.
2. Turn burner onto medium high.
3. Chop onion and add to pan. Add pinch of salt.
4. While onion is cooking, chop garlic finely. Add to pan and continue to saute until onion is translucent.
5. Add juice from Canned whole tomatoes. Hand crush whole tomatoes into pot.
6. Open Black Beans and rinse well. Add to pot along with 1 tablespoon of chili powder.
7. Stir ingredients together, place lid on top, reduce heat to low and let simmer for approximately 30 minutes. Enjoy!
