3 cans of black beans and fresh produce; very tasty
Ingredients:
700 g black beans, canned
1/2 large red onion, chopped
1 medium tomato, chopped
3 cloves fresh garlic, minced
1/3 cup frozen corn
3 tsp fresh cilantro or to taste
1 tsp cumin or to taste
Directions:
1. Chop tomato, onion, and mince garlic
2. Open 3 cans of black beans and pour into a large pot
3. If you have a lot of time to let this cook, then add all of the vegetables in with the beans and let simmer for several hours. (If you are low on time, sautee the vegetables seperately, while you let the beans heat, then add the veggies after the beans are warm.
4. During the last half or quarter of your cooking time, add any salt, pepper, cumin, cilantro that you would like.
5. Serve with tortilla chips
