Black Bean Chicken Chili

Uses 99% fat free ground chicken for a low fat main dish.
Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 lb ground chicken breast
2 red peppers, seeded and chopped
1 jalapeno pepper, seeded and chopped
10 ounces fresh mushrooms, chopped
3 medium tomatoes, seeded and chopped
1 ear of corn, cooked, kernels removed
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1 teaspoon cumin powder
1 1/2 tablespoons chili powder
2 (15 ounce) cans black beans, drained
1 (6 ounce) can tomato paste
1 tablespoon red wine vinegar
Directions:
1. Heat oil in large saucepan over medium heat.
2. Add onion and garlic and saute for about 5 minutes until soft.
3. Add chicken and cook over medium-high heat for 10 minutes.
4. Add red peppers, jalepeno pepper, mushrooms, tomatoes, and corn and saute for 10 minutes.
5. Add seasonings.
6. Stir in black beans, tomato paste, and vinegar and let come to a boil.
7. Reduce heat to low and cover. Let simmer for 20 minutes, stirring occasionally.
