Black Bean Brownies

These quick and easy brownies are high in fiber and gluten free. A variation of other black-bean brownie recipes.
Ingredients:
1 (15 1/2 ounce) can black beans, rinsed and drained
3 eggs
3 tablespoons vegetable oil
3 tablespoons cocoa powder
2 tablespoons strong coffee (or 1 tbs instant coffee dissolved in 1 tbs hot water)
1 teaspoon baking powder
1 teaspoon vanilla extract
3/4 splenda sugar substitute
Directions:
1. Preheat oven to 350 degrees F.
2. Lightly grease an 8x8 square baking dish.
3. In food processor or blender, combine all ingredients until black beans are very well blended.
4. Bake in preheated oven for 30 minutes, or until edges begin to pull from sides of pan.
5. Allow to cool before slicing. Serves 16.
