Ingredients:
2 cups seeded diced plum tomatoes (6-7 tomatoes)
1 (19 ounce) can black beans, rinsed
1/4 cup chopped scallion
2 tablespoons chopped fresh cilantro
2 tablespoons lime juice
1 tablespoon extra virgin olive oil
1 -2 teaspoon minced canned chipotle chile in adobo
1/4 teaspoon salt
Directions:
1. Combine all ingredients in a bowl and stir.
