Black Bean and Sweet Potato Burrito

Yummy Black bean and sweet potato burritos! Super easy to make, incredibly difficult to mess up!
Ingredients:
1/2 large sweet potato
1 cup black beans
1 garlic clove
1/2 onion
1/2 cup corn
1 teaspoon cumin
hot pepper flakes
1/2 cup shredded cheese, to taste
salt and pepper
Directions:
1. Preheat oven to 350.
2. Steam bake the sweet potatoes for an hour. Let cool before peeling and cutting. Cut them into bite size chunks and add them to a mixing bowl.
3. To the sweet potatoes, add the drained and rinsed black beans, corn, and salsa. Gently combine.
4. Spoon the sweet potato mixture into the tortillas, roll and place seam side down in the baking dish. Repeat for all the tortillas. Add the shredded cheese over the sauce.
5. Bake at 350 for 25 minutes, or until cheese has melted and sauce is bubbly.
6. Let cool slightly before serving.
7. Serve Sweet Potato Black Bean Enchiladas with veggie or fruit.
