This recipe comes from the O'Keefe Estate that I purchased in Dallas, Texas in 1988.
Ingredients:
19 ounces canned black beans drained and rinsed
1/2 cup chopped red onion
1 tablespoon chopped fresh cilantro
1 tablespoon diced jalapeno pepper with ribs and seeds removed
1 tablespoon fresh lime juice
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1 large tomato chopped and seeded
1 minced garlic clove
12 ounces whole kernel corn drained
1/2 teaspoon salt
Directions:
1. Combine all ingredients in medium bowl then cover and chill at least 2 hours.
