Ingredients:
1/4 cup(s) balsamic vinegar
1 can(s) black beans, rinsed and drained
2 tablespoon(s) brown sugar
1/4 cup(s) chopped onion
1/4 cup(s) cider vinegar
1/3 cup(s) fresh cilantro, minced
1.5 cup(s) fresh corn or frozen thawed
1.5 teaspoon(s) fresh lime juice
1/2 teaspoon(s) ground cumin
1 clove(s) minced garlic or to taste
1 red bell pepper chopped
Directions:
1. Bring first 6 ingredients to a boil in a small saucepan. Reduce heat and simmer 2 minutes or until brown sugar is dissolved.
2. Combine vinegar mixture, corn, and remaining ingredients in a large bowl. Cover and chill
