Black Bean And Corn Salad

Another great salad recipe, use fresh corn when available! Allow to chill 2 hours before serving on the salad greens. I use arugula and romaine lettuce for the greens.
Ingredients:
11/2 tablespoons minced fresh cilantro
1 tablespoon chopped fresh parsley
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cumin
1 (15-ounce) can black beans, rinsed and drained
1 (8-ounce) can baby corn, rinsed and drained
1/2 cup chopped tomato
1/4 cup diced peeled avocado
2 tablespoons chopped green onions
1 tablespoon chopped seeded jalapeno pepper
4 cups salad greens
Directions:
1. Whisk together first 6 ingredients in a large bowl;
2. Stir in next 6 ingredients (up to and including jalapeno peppers). Cover and chill 2 hours.
3. Serve over salad greens.
