A really easy, really good recipe.
Ingredients:
1 (15 ounce) can black beans, rinsed and drained
4 ounces monterey jack pepper cheese, cut into 1/4 inch cubes
1 (10 ounce) can corn, drained
1/4 cup green onion, sliced
3 1/2 cups celery, sliced thin
1 small red pepper, diced
3/4 cup picante sauce
2 tablespoons olive oil
2 tablespoons lemon juice
1/2 teaspoon ground cumin
1 garlic clove, minced
Directions:
1. Combine well and chill before serving.
