My version of what some call Texas Caviar
Ingredients:
2 (15 1/2 ounce) cans black beans, rinsed
1 (10 ounce) can rotel diced tomatoes and green chilies, drained
1 1/2 cups frozen white shoepeg corn, thawed
2 -3 tablespoons chopped cilantro
3 green onions, diced
1/2 green pepper, diced
1 lime, juiced
Directions:
1. Combine all ingredients- add seasoning to taste.
