I call this the *ultimate* soup recipe because it's got more healthy food than any recipe I've ever seen for WLS patients AND manages to taste totally delish!!! I have been eating it for lunch for 3 days and I've lost 2. Read more .5 pounds in that time... Honestly, this soup is something I crave. It tastes that good. The garnish is a must for ultimate flavor experience!
Ingredients:
5 cans black beans drained
2 cans chicken broth or veg broth
1 c. sliced carrots
1 1/2 c corn( which you can omit if you don't tolerate corn) drained if canned
1 finely chopped sweet bell pepper
1 chopped big sweet yellow onion
1 t. minced garlic
1t. cumin
1t. corriander
2t olive oil
* garnish* fresh cilantro,diced avacado, ff or light sour cream
Directions:
1. Puree 2 cans of beans and a can of broth together in a blender. Set aside.
2. Sautee onion,carrots,bell pepper, and garlic in oil until tender and carmalized. Add puree and all other ingredients.
3. Simmer 30 min or more.
4. Stir a huge heaping tablespoon of sour cream,avacadoes, chopped cilantro directly into a big hot soupbowl of soup. ENJOY!!!
