Black and White Bean salad with Quinoa
Ingredients:
2 cups navy beans
2 cups black beans
1/4 cup quinoa
1/4 cup tarragon
1 cup cucumber, chopped
1 medium onion, chopped
1/4 cup vegetable oil
3 tbsp lime juice
3 tbsp rice vinegar
1/4 tsp chili powder
1 salt and pepper
Directions:
1. Add beans in large bowl
2. Boil Quinoa until tender; drain and add to beans
3. Add tarragon, onion and cucumber
4. In separate bowl, add vegetable oil, lime juice, rice vinegar, chili powder, and salt and pepper; whisk together until emulsified
5. Add dressing to the salad; toss and serve
