Bisquick Beer-Batter Fish Fry

This batter always turns out light and fluffy, I also like to add in some cayenne pepper :)
Ingredients:
1 cup bisquick
1/3 cup cornmeal
1 teaspoon salt
1/4 teaspoon pepper
6 ounces beer
2 lbs fish fillets
oil (for frying)
Directions:
1. Heat oil to 375 degrees F.
2. Combine dry ingredients; add beer to get a sticky consistency for dipping.
3. Salt fish; dip in batter.
4. Deep fry until fish is golden brown.
5. Note: a thicker cut of fish would be more suitable for this recipe such as Snapper, Walleye White Bass White Perch etc.
