Biscuit Muffin Cups

The biscuit recipie is from Betty Crocker. We use mostly whole wheat flour and subtitute buttermilk for the milk. For the filling you can add pretty much whatever you like. Our favorites are with pizza toppings, and with chicken and bbq sauce. (The amounts are just an estimate since I don't usually measure.)
Ingredients:
1/3 cup shortening
1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup milk
6 -8 ounces meat
1 cup cheese
Directions:
1. Cut shortening into flour, baking powder, and salt until mixture resembles fine crumbs. Stir in just enough milk so dough leaves side of bowl and rounds up into a ball.
2. Turn onto floured surface and knead lightly 10 times. Roll 1/4 inch thick and cut with floured biscuit cutter. (You can roll them as thin as you need to, you just need to end up with 24 biscuits. Don't be afraid that they're to thin, they will grow in the oven.).
3. Line 12 lightly greased muffin pans with one biscuit. (They might have to get even thinner.).
4. Fill with your choice and top with the other 12 biscuits.
5. Bake at 375 for 12-15 minute.
